I have always loved cooking. I remember first making a dish at the age of 8. Growing up I found myself always drawn to the weekend cooking shows. When my mother started traveling for
business opportunities I quickly stepped up to start cooking for the family. I studied my mother’s cooking technique so I could help replicate our favorite dishes. I also had the help of my aunt and of course my cooking shows.
Watching cooking shows helped spark interest in all kinds of cuisine. I am always cooking and tasting new dishes, which you will find in this blog.
What is Tapoli Food?
I named this blog Tapoli Food as an homage to my Ghanaian roots. A tapoli is a wooden grinding tool used with an asanka/apotoyewa, which is an earthenware disc-shaped bowl. The tapoli is an innovative tool with the perfect surface area made to efficiently grind ingredients. When used with the asanka you will be able to achieve a product with nuanced texture and flavors. I believe Tapoli Food embodies these qualities. You will find food with nuanced flavors and textures that offer a satisfying food experience.

Tapoli Food is about enjoying food through my experiences. I am Ghanaian American, so you will definitely find Ghanaian and West African fare. You will also see American dishes. As described in my abbreviated bio I spent some time in the Caribbean while in medical school. I lived on the eastern Caribbean island of Saint Vincent and the Grenadines for two years. There I saw familiar ingredients prepared in various ways. I also experienced beautiful dishes that reflect the history and culture of the West Indies. You will be transported out of your homes with the dishes found on Tapoli Food.
