This is a simple and easy donut (doughnut) hole recipe that you will love. It has the familiar flavors associated with bofrot (Ghanaian donuts) or puff puff (Nigerian version). It is an easy way to fry up a quick treat, avoiding the long cooking times of traditional donuts. There is no waiting for the yeast to do it’s work or kneading the dough in this recipe. It is such a great time saver! The baking powder plus the yogurt act as the rising agents of this recipe. This combination requires no wait time, which is ideal if you want a sweet treat in just a few minutes.

These donuts are a fan favorite in my home and always run out immediately. Being that this recipe is so simple, I can easily prepare these donuts without a hassle. Another plus is that many of these ingredients are staple pantry items that do not require a trip to the store if you have a sudden craving for them.

The Yogurt

For this recipe, I recommend using plain yogurt because you can control the amount of sugar in the donut. If you end up using any other flavor, vanilla yogurt would be the next best option. All the other flavors, such as blueberry, strawberry, etc, have food colorings and added flavorings that tend to become bitter after frying. Greek plain or vanilla yogurt can also be used in this recipe; however, it has a dryer consistency, so you may have to add a bit of milk to loosen the dough.

The pot

You will want to use a pot deep and wide enough for deep-frying so the donuts don’t touch the bottom of the pot and will not be overcrowded during the frying. You can use a steel pot or a Dutch oven. Dutch ovens distribute and hold an even heat well. Cast iron pots are also a great alternative.

Portioning the donuts

As you can see from the photos, the donuts are perfectly round and uniform. I recently purchased a cookie dough scoop. I prefer it for its ease of use and consistent donut size.

Yogurt Donuts

Ingredients
  

  • 1 Cup All purpose flour
  • Tsp Baking powder
  • 1/2 Tsp Nutmeg
  • 1/4 Cup Sugar
  • 1/2 Cup Plain yogurt
  • 1/4 Tsp Vanilla extract
  • Vegetable Oil- Enough to fill pot up to 3/4 of the height

Instructions
 

  • In a deep pot preheat oil over medium heat. If using a thermometer, heat oil to approx 325°F (160°C).
  • In a bowl, mix flour, baking powder, and sugar.
  • Grate approx. 1/2 teaspoon of nutmeg into the flour mix.
  • Fold in yogurt and press out large lumps of flour.
  • Fold in the vanilla extract.
  • Use the cookie dough scoop to portion one donut hole into the pot. If the dough begins to immediately sizzle, then the oil is ready for use.
  • Scoop in more donut holes until they just cover the top but still have space to flip over.
  • Fry on each side approx 3 minutes and then flip and fry for another 3 minutes or until golden brown on all sides.
  • Check for doneness by puncturing the center of one of the donuts with a toothpick. If the toothpick comes out clean, then the donut is cooked in the middle.
  • Remove the donuts from the oil and place them in a strainer or cooling rack to drain excess oil. Enjoy!
