Chickpea Salad

Ingredients
  

  • 1 16 oz can of chickpeas or 1 cup cooked (drained and rinsed)
  • 2 sprigs of green onion
  • 1 tbsp chopped cilantro
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin powder
  • 1 tsp olive oil
  • salt to taste

Method
 

  1. Finely slice the green onion and cilantro
  2. In a medium-sized bowl, combine all the ingredients and mix well
    chickpea salad in a bowl
  3. Enjoy right away or place in the fridge to allow the flavors to meld together.
