Ghanaian Style Spinach Stew with Mushrooms

Ingredients
  

  • 1/3 cup vegetable oil (add up to 1/2 cup if preferred)
  • 1 medium onion
  • 4 cloves of garlic
  • 1 habanero (optional)
  • 4 medium roma tomatoes
  • 12 oz bag of fresh or frozen chopped spinach
  • 6 oz preferred mushroom
  • 2 seasoning cubes
  • salt to taste
  • up to 1/4 cup of water if needed

Method
 

  1. Cut onion in half and slice half of the onion, set the other half aside
  2. Blend half of onion, garlic, and pepper with a few drops of water to loosen
  3. Blend tomatoes into a smooth puree and set aside
  4. Heat saucepan over medium heat with oil
  5. Add sliced onions and sautee until softened and tranlucent
  6. Add onion blended onion mixure
  7. When the onion puree reduces to half, add the tomato puree and cook until it reduces to half and the oil begins to settle at the top
    Stew instructions
  8. Season the tomato stew with the seasoning cubes
  9. Add spinach to the stew and cook down until spinach is softened (this will take longer to cook if spinach is frozen)
  10. Add mushroom of choice and cook until tender and the oil begins to settle at the top
  11. **optional** If the stew consistency is too tight then add some water to loosen it to your liking.
