We are back with another flavor-packed, light, and refreshing dish that pairs perfectly with grilled chicken, fish, or a plant-based meal or shrimp. Sometimes, I need to take a break from all the heavy, starchy, and meaty meals, so I make a salad. This chickpea salad is satisfying yet light and refreshing. Sometimes, I eat it on its own, with a light protein, or treat it as a topper in a bowl of salad.
The contrasts of textures, from the bright, crisp onions to the velvety chickpeas, create the perfect balance in this side salad. Overall, this salad is bright, robust, and well-balanced -the perfect complement to rich and spiced dishes like the yogurt-marinated broiled chicken you will love to recreate with me!
This salad is also an excellent meal prep option or a quick go-to side when you need something light yet satisfying.

Chickpea Salad
Ingredients
- 1 16 oz can of chickpeas or 1 cup cooked (drained and rinsed)
- 2 sprigs of green onion
- 1 tbsp chopped cilantro
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin powder
- 1 tsp olive oil
- salt to taste
Instructions
- Finely slice the green onion and cilantro
- In a medium-sized bowl, combine all the ingredients and mix well
- Enjoy right away or place in the fridge to allow the flavors to meld together.
