Blend onions, garlic, and ginger in a blender, transfer to a bowl
Blend the fresh tomatoes with the habanero
Place beef seasoned salt, water, and ½ of onion mixture in a large pot, cover, and steam until cooked through. Approx 10-15 minutes.
Once the beef is steamed through, remove the beef and broth and fry the beef with the 1/2 cup of oil until golden and caramelized. Remove the beef from the pot.
In a separate pot, heat oil and add the other half of onion mixture and fry for 5 minutes. Add tomato paste and fry for another 5 minutes.
Add the blended tomatoes to the onion and tomato paste and simmer for 5 minutes
Add the chopped carrots and bell peppers along with the beef and beef stock and simmer for 10 to 15 minutes
Serve with white rice and enjoy!
