Method
- Heat oil over medium heat in saucepan.
- Season fish with seasoned salt and fry in oil until golden brown, set aside.
- Chop and blend 1/2 of the onion, garlic, and ginger and fry in reserved oil for 5-7 minutes
- Add tomato paste and fry for about a minute.
- Blend diced tomatoes until slightly crushed.
- Crumble and add stock cube and tomatoes. Simmer for 10 minutes .
- Add the fried fish. Slice the other half of the onion lengthwise and add to stew along with the green pepper. Simmer for another 5 minutes.
