Ghanaian Fish Stew

Ingredients
  

  • 2 Large whiting fish (Approx 3lbs) cut into 1½ inch sized pieces
  • 1 teaspoon Seasoned salt
  • cups Vegatable oil
  • 1 Large onion
  • 4 Cloves of garlic
  • 1 Green pepper sliced (julianned)
  • 1 14oz Can of diced tomatoes
  • 1 tablespoon Tomato paste
  • 1 Stock cube
  • 1 Habenero add more if desired

Instructions
 

  • Heat oil over medium heat in saucepan.
  • Season fish with seasoned salt and fry in oil until golden brown, set aside.

  • Chop and blend 1/2 of the onion, garlic, and ginger and fry in reserved oil for 5-7 minutes
  • Add tomato paste and fry for about a minute.

  • Blend diced tomatoes until slightly crushed.
  • Crumble and add stock cube and tomatoes. Simmer for 10 minutes .

  • Add the fried fish. Slice the other half of the onion lengthwise and add to stew along with the green pepper. Simmer for another 5 minutes.
