This Ghanaian-style fish stew is a recipe I have enjoyed in my household for years. It is fairly easy to make and is so full of flavor. This stew is best served with white rice. This stew also pairs well with other starch dishes like kenkey, waakye, or jollof rice. Like most Ghanaian stews, this stew is tomato-based but is unique in its flavor.

Fish

The best type fish for this dish a white fish. Any type of white fish that holds up when fried will work for this dish. Whiting is the type of fish I use for this recipe, however, tilapia is a delicious alternative I enjoy.

Ingredients
  

  • 2 Large whiting fish (Approx 3lbs) cut into 1½ inch sized pieces
  • 1 teaspoon Seasoned salt
  • cups Vegatable oil
  • 1 Large onion
  • 4 Cloves of garlic
  • 1 Green pepper sliced (julianned)
  • 1 14oz Can of diced tomatoes
  • 1 tablespoon Tomato paste
  • 1 Stock cube
  • 1 Habenero add more if desired

Instructions
 

  • Heat oil over medium heat in saucepan.
  • Season fish with seasoned salt and fry in oil until golden brown, set aside.

  • Chop and blend 1/2 of the onion, garlic, and ginger and fry in reserved oil for 5-7 minutes
  • Add tomato paste and fry for about a minute.

  • Blend diced tomatoes until slightly crushed.
  • Crumble and add stock cube and tomatoes. Simmer for 10 minutes .

  • Add the fried fish. Slice the other half of the onion lengthwise and add to stew along with the green pepper. Simmer for another 5 minutes.
