Potato Salad

Ingredients
  

  • 5-6 Medium russet Potatoes
  • 1 Egg
  • ½ Cup Mayonnaise
  • 1 Tsp Mustard
  • ½ Medium Onion
  • ½ Cup Relish
  • Salt to taste
  • Sugar to taste

Method
 

  1. Cut potatoes in half and boil along with egg until tender in salted water
  2. Drain and cool potatoes and cut into 1/2 inch cubes
  3. In a large bowl mix mayonnaise, mustard, relish together. Taste for seasoning and add salt and add sugar if the relish is too tart.
  4. Dice onions and peeled egg and mix in the mayo mixture
  5. Add potatoes into the mayo mixture
  6. Garnish with mixed herbs and enjoy!
