We just came out of the holiday season, which meant a time of feasting! Every year and actually twice a year (Thanksgiving and Christmas) we would have a turkey baking in the oven alongside jollof rice, green beans, and potato salad! This recipe has been our family for years. My mother taught me how to make it and now I make it for my family. This potato salad is creamy and has an awesome textured bite from the chopped onions that will have you craving for more! Although it’s a dish that’s always at the dinner table during the holidays, I enjoy it all year round with barbecue or baked chicken. Try this version of potato salad which won’t disappoint!

Potato Salad

Ingredients
  

  • 5-6 Medium russet Potatoes
  • 1 Egg
  • ½ Cup Mayonnaise
  • 1 Tsp Mustard
  • ½ Medium Onion
  • ½ Cup Relish
  • Salt to taste
  • Sugar to taste

Instructions
 

  • Cut potatoes in half and boil along with egg until tender in salted water
  • Drain and cool potatoes and cut into 1/2 inch cubes
  • In a large bowl mix mayonnaise, mustard, relish together. Taste for seasoning and add salt and add sugar if the relish is too tart.
  • Dice onions and peeled egg and mix in the mayo mixture
  • Add potatoes into the mayo mixture
  • Garnish with mixed herbs and enjoy!
