Ghanaian Beef Stew

As with any Ghanaian stew, you will find a tomato-based sauce accompanied with vegetables, meat, or fish. In this recipe, I am using my go-to tomato stew recipe with beef. This stew is flavorful and is usually served with white rice or can accompany jollof rice. I love adding vegetables like green peppers, carrots, and mushrooms which pair perfectly with this dish and lend it’s own flavors to the stew.
Beef Stew
Ingredients
- ½ Cup Vegetable oil
- 1 Onion
- 2 2 Large tomatoes
- 3 oz Tomato paste
- 2 Ginger
- 4 cloves Garlic
- 1 Large shrimp stock cube
- 1 Habanero
- 1½ lbs Cubed Beef
- 2 tsp Seasoned salt
- 3 tbs Water
- 1 Medium green pepper chopped
- 2 Carrots chopped
Instructions
- Blend onions, garlic, and ginger in a blender, transfer to a bowl
- Blend the fresh tomatoes with the habanero
- Place beef seasoned salt, water, and ½ of onion mixture in a large pot, cover, and steam until cooked through. Approx 10-15 minutes.
- Once the beef is steamed through, remove the beef and broth and fry the beef with the 1/2 cup of oil until golden and caramelized. Remove the beef from the pot.
- In a separate pot, heat oil and add the other half of onion mixture and fry for 5 minutes. Add tomato paste and fry for another 5 minutes.
- Add the blended tomatoes to the onion and tomato paste and simmer for 5 minutes
- Add the chopped carrots and bell peppers along with the beef and beef stock and simmer for 10 to 15 minutes
- Serve with white rice and enjoy!
