Ghanaian Beef Stew

As with any Ghanaian stew, you will find a tomato-based sauce accompanied with vegetables, meat, or fish. In this recipe, I am using my go-to tomato stew recipe with beef. This stew is flavorful and is usually served with white rice or can accompany jollof rice. I love adding vegetables like green peppers, carrots, and mushrooms which pair perfectly with this dish and lend it’s own flavors to the stew.

Ingredients
  

  • ½ Cup Vegetable oil
  • 1 Onion
  • 2 2 Large tomatoes
  • 3 oz Tomato paste
  • 2 Ginger
  • 4 cloves Garlic
  • 1 Large shrimp stock cube
  • 1 Habanero
  • lbs Cubed Beef
  • 2 tsp Seasoned salt
  • 3 tbs Water
  • 1 Medium green pepper chopped
  • 2 Carrots chopped

Method
 

  1. Blend onions, garlic, and ginger in a blender, transfer to a bowl
  2. Blend the fresh tomatoes with the habanero
  3. Place beef seasoned salt, water, and ½ of onion mixture in a large pot, cover, and steam until cooked through. Approx 10-15 minutes.
  4. Once the beef is steamed through, remove the beef and broth and fry the beef with the 1/2 cup of oil until golden and caramelized. Remove the beef from the pot.
  5. In a separate pot, heat oil and add the other half of onion mixture and fry for 5 minutes. Add tomato paste and fry for another 5 minutes.
  6. Add the blended tomatoes to the onion and tomato paste and simmer for 5 minutes
  7. Add the chopped carrots and bell peppers along with the beef and beef stock and simmer for 10 to 15 minutes
  8. Serve with white rice and enjoy!
